Not only will these two things add more streams of income (spoiler: that is a must for any business, and a huge benefit) but they will allow you to get your name out there in the process. This is huge since you are the new guy on the block, and it will surely help you out with branding as well.

Ideally, more catering gigs/events will lead to more people finding out about your food truck, which should lead to more customers and sales.

In fact, that little trick alone could lead to your customers venturing to your truck to try out the new meal (note: that will really be the case if you have a strong following, especially when it comes to social media, and you make this new item known).
