Everyone has taken down a hot dog or two in their time. With that in mind, most people probably stick with basic toppings when it comes to their dogs (such as ketchup, mustard and things of that nature). Cousins Maine Lobster is literally taking over the food truck scene! After all, not only will you find one of their trucks in Los Angeles but places like Atlanta, Las Vegas and Orlando as well (and that is just the beginning).

To make a long story short, Cousins Maine Lobster serves up the best of the best when it comes to lobster rolls; however, this food truck also serves up dishes like lobster quesadillas, lobster tots and we will just stop there, because we know your taste buds are probably running wild.

When thinking of where to start up a food truck business, most people would have places like California, Florida and New York in mind (among others). However, not many people would think of starting a mobile kitchen in Alaska, but that is exactly what Wagner’s Pizza Bus has accomplished.

FoodTruckr had the pleasure of speaking with Mike Wagner of Wagner’s Pizza Bus. If you are looking for an awesome story, then look no further than this amazing food bus, if you will. Wagner’s Pizza Bus is located in Fairbanks, Alaska, and it is owned and operated by Michael and Diana Wagner. What makes this food truck so special? Well, for starters, it is located in Alaska … and it stays open year-round.

And now, let’s let Mike Wagner tell us the story of Wagner’s Pizza Bus.

“We lived in a small little community that really didn’t have a whole lot as far as food, and I actually went to a guy having a yard sale,” Wagner said. When I went in and I was looking at his stuff, he proceeded to tell me that it was a pizza shop. So we ended up leasing a restaurant for about 10 months on the terms that in a year, he was going to sell it to us. But at the 10-month mark, he reneged on the deal. We already had all of the equipment, so we just turned around and ended up buying a food truck. It was a school bus.”

In terms of Wagner’s Pizza Bus’ No. 1 item, it revolves around — you guessed it — pizza.

“Pizza… We can do just about anything.”

That is the case because of the “big gas fired oven” and the endless amount of toppings offered at Wagner’s Pizza Bus. Wagner said there are at least 20 toppings customers can choose from.

“It’s not a thin crust and it’s not a thick crust.”

According to Wagner, at first, Wagner’s Pizza Bus let the customers pick anything they wanted on their pizzas. However, people started asking about specialty pizzas, so they started incorporating specialty pizzas.

“We have probably 10 or 12 specialty pizzas that we do.”Pizza

Chicken bacon ranch, Philly cheesesteak, chicken fajita and a taco pizza are just some of the specialty pizzas that Wagner’s Pizza Bus has to offer. For all of those breakfast lovers out there, Wagner’s Pizza Bus also offers a breakfast pizza, basically making this food truck a one-stop shop.

Although Wagner’s Pizza Bus is, of course, most known for its amazing pizzas, that is not the only thing this food truck dishes out.

“When we’re out on the road, we strictly just try to stay with pizza, but we do hoagies. We do the original Philly cheesesteak. We do that with the chicken, too. And then we do a meatball sub, ham and cheese, turkey, cheese cosmo, a spicy Italian, a BLT, and we also do burgers… We do salads… And we also do some ice cream stuff. Milkshakes. Sundaes. Floats.”

Fairbanks, Alaska gets extremely cold in the winter. However, that does not stop Wagner’s Pizza Bus from serving up its delicious recipes. In fact, Wagner’s Pizza Bus will even stay open when the temperatures drop to minus 30 degrees!

“We run year-round. Usually, in the summertime, we do events in town, in downtown Fairbanks… During the winter months, we set up in the little community that we live in, which is Two Rivers. And right now, we are actually set up on the edge of our property, which is a little bit off the main highway. We cater mostly to the locals in the wintertime. It’s just easier for us. But yeah, we run year-round, even at 30 below.”

“We have a 600 degree oven in there, plus a second source of heat, so it stays nice in there.”

If you are a fan of Halloween, or the fall festivities in general, then you will love what Wagner’s Pizza Bus is doing during this time of the year.

“Like right now, we have a ton of Halloween decorations out, and then for people who come to see the Halloween decorations, we offer free cocoa and free hot cider. At Christmastime, we do Christmas lights and stuff like that. Where we’re at, they have some dog sledding events in town, and we’ll go do them.”

So, if you are ever at a dog sledding event in Alaska, make sure to look out for Wagner’s Pizza Bus.

PizzaNow, let’s get back to some of the food options. In particular, we will check out some of the pizzas that Wagner would recommend for customers who have never been to Wagner’s Pizza Bus.

“Our supreme is a big hit, and our three meat pizza is a big hit. But then for the people who don’t like the meats, we have our white garlic and herb pizza. We just started doing a pesto and tomato and spinach pizza that’s a pretty big hit.”

We asked Wagner what his favorite part about being a food truck owner was, and this is what he had to say:

“Meeting different people. Especially this year. We were downtown, and we actually met a lot of people from our home state, which is Pennsylvania.”

Also, Wagner stated that when he hears people actually recommending Wagner’s Pizza Bus — which seems to be a common occurrence — it makes running a kitchen truck that much better.

With that said, being part of the food truck industry isn’t for everyone. It’s a very tough industry to grow and thrive in, after all. Nonetheless, here’s some advice Wagner offered up for prospective food truck owners.

“It’s a lot of work … but the freedom is what we like because my wife and I do this together. We are going into our fourth winter of my wife and I working together every day. Not every couple can do that, so that’s what makes it nice. ”

Wagner mentioned that his job before this featured him being away from his family for almost 15 hours a day. And some days, longer than that. Clearly, owning a food truck is a great change in that department for him.

Wagner said he jokes around about the ultimate goal being to own a food truck in all 50 states. Luckily, he already has a great start as he is in arguably one of the toughest states to reach in Alaska.

In this day and age, coffee is all the rage. As a result, everyone likes a good coffee story, and we have an amazing coffee story for you today.

FoodTruckr had the pleasure of speaking with Amy Herrmann of Better Buzz Mobile Espresso, which is located in Manchester Center, VT. In terms of Better Buzz Mobile Espresso’s story, well, they started off as a brick-and-mortar cafe.

“We started our food truck after closing our brick-and-mortar cafe, Wired,” Herrmann said. “That’s very opposite of how it usually happens, but after a few years away we realized that there was still a gap, a need, if you will, for what we had been doing at Wired. We spent some time searching for another location but just couldn’t find that right spot. We live in an interesting community, just a few miles from several ski areas. There are lots of second homes and business is very seasonal. We did find one neat location in town that could have worked had the rent not been astronomical (it stayed vacant for eight years after we opted out). But because we are still an “outlet” town, rents are geared toward large corporations, not the little guy.”

“Fast forward a few years and I’m sitting on a bench outside of Kiplinger in D.C., waiting for my sister to take her lunch break. Food trucks were lining up (Franklin Square maybe?) and a little light bulb went off. Instead of opening another cafe and waiting for people to come to me, I should go to them!”

That’s what the food truck industry (or any industry, really) is all about. Finding a gap, if you will, in the market and then filling said gap with an amazing idea/concept. That is exactly what Herrmann did.Coffee

“We still had a fair amount of equipment in storage, so it was just a matter of finding the right truck. Everyone knows that trucks can get really expensive really quick. Opening a food truck in Southern Vermont is a real numbers game too. We don’t have a huge population base, we probably won’t operate year-round and the permitting for some towns is incredibly biased (“But it’s not fair to the restaurants who pay more than you in rent, etc… permit denied!”). So with this in mind, we set our budget and began searching. It took about nine months for the perfect truck to pop up. But when it did, I had check in hand, ready to go. The irony of it was that I was buying one of the trucks that I had seen in Franklin Square in D.C. while waiting for my sister!”

And now, let’s get to the product, the food, the coffee.

“We are an interesting little, pink truck. Our menu is deep when it comes to coffee and espresso based drinks. But, we don’t have a large selection of food items. If I’m hanging out in my “spot” in Southern Vermont, I’ll bake and frost some donuts and maybe make some muffins and/or cookies. But, when we are at a festival/concert/event, we are usually paired with a pastry/desert truck, which means we can focus on the coffee, which is our No. 1 item, followed by lattes and smoothies.”

Since it is fall, a time when food truck owners tend to mix things up, we asked Herrmann if Better Buzz Mobile Espresso incorporates a fall menu. Here’s what she had to say:

“Our Fall menu usually includes steamed cider, apple chai and pumpkin chai. We also have a local baker that we contract with for amazing cider donuts.”

Of course, food truck owners have to prepare for the colder months, the winter. After all, not every single mobile kitchen is located in a place where nice weather is a year-round occurrence.

“Because we don’t have a garage to park the truck in (yet), we have to watch the weather closely as winter approaches. Both my espresso machine and coffee machine have boiler systems that are prone to freezing, along with the roof mounted water tank and water lines. Once the long range forecast calls for sustained freezing temps, we offload the equipment and call it a season. Then, I wax my boards and go snow sliding!”

If you ever find yourself at Better Buzz Mobile Espresso, you might want to go with the latte. After all, if someone could only order one meal off of the menu, that is exactly what Herrmann would recommend.

“If someone could order just one meal/item, I’d tell them to order a latte. We are constantly being complimented when it comes to our lattes. Both my husband and I spent time in Seattle attending a barista academy. We learned proper espresso extraction and steaming techniques and we’ve both been known to work on perfecting our free-pour latte art. Sorry about the silly looking rosetta! I’ve been in far too many coffee shops where the barista sets the wand in the steaming pitcher and walks away. Meanwhile the machine is screaming away and my milk is literally being burned. If your hand is not on that pitcher, controlling the swirl and monitoring the temperature, it probably isn’t going to be a great drink.”

Really successful food truck owners love everything about the food truck industry. They love the people, the food, running a food truck, etc. In terms of Herrmann’s favorite part about this industry, she went with the people.Coffee

“My favorite part of being a food truck owner is meeting people. We go to so many different events throughout the year, which gives us a chance to meet and network with all kinds of characters. I could do without the long drives to get to some events but I knew that going into this. And if you get stuck behind me on some Vermont/New Hampshire back road, I’m sorry! My little truck drives like a waxed up saucer sled!”

When you are first starting off in the food truck industry, it’s crucial to get as much advice and information as possible. Therefore, prospective owners might want to take this food truck advice to heart:

“Advice to new truckers? Write a ridiculously solid business plan and research regulations/permits before you even spend a dime. There is still a myriad of red tape that needs to be navigated for mobile vendors and it’s not worth investing in a project if you can’t even get a permit to operate.”

As we get deeper into fall and the weather gets cooler and cooler, the glorious food that is chili becomes more and more popular. With that said, if you are a fan of chili or live in Texas (or both), then it doesn’t matter what time of the year it is — chili is always in season.

FoodTruckr had the pleasure of speaking with Edward Hambleton of Texas Chili Queens. Texas Chili Queens is located in Austin, Texas and it’s providing Austin with many different variations of chili. Year-round, might we add. To get a better sense of what Texas Chili Queens is about, it’s important to learn Hambleton’s background and how Texas Chili Queens got its start.

“I had been living in New York City working as a teacher for a while and I moved back to Texas,” Hambleton said. “I was born in Austin and raised in Dallas… I was rediscovering the glory of Texas cuisine, and I remembered the Frito pie… We had a big work event where I organized a Frito pie kind of Thanksgiving at work…”

In terms of Hambleton’s contributions for this Thanksgiving feast, he brought a huge pot of chili. In college, he was a personal assistant to a chef.

“I was researching a chili recipe. I came across the history of Chili Queens. They were women in the late 19th century and early 20th century based primarily out of San Antonio who would make chili all day in huge pots and then sell it all night in the main Military Plaza in downtown San Antonio. So I was kind of struck by their story and history, and their entrepreneurial spirit.”

Hambleton figured this concept would really fit into the food truck scene, and he was correct in that thinking, especially in Texas.

“Chili is a perennial favorite here in Texas.”

Now, let’s get down to Texas Chili Queens’ menu and the No. 1 food item they serve.

“The thing that we sell the most of is our classic chili. We call it the San Antonio. It’s our San Antonio Frito pie. It’s beef and pork simmered with our chili puree and our seasoning. And then we just give a heaping ladle over some nice crunchy Fritos, and top it off with cheese, onions, jalapeños. If the season is right, sour cream, and then people have at it and it’s delicious.”

“We have five different ways to get your chili served. We have a really spicy version called the El Paso with beef and tomatoes… and that pairs nicely with our cornbread.”

Hambleton also mentioned the chili cheese fries as one of the most popular items on the menu. Not only are these fries packed with flavor, but customers also have plenty of options. Customers can have one of the five different chili options that Texas Chili Queens has to offer dumped on their fries.

One of the popular chili fries combos that Hambleton mentioned was the vegan chili, which he referred to as the Austin chili. He mentioned as long as people don’t get any cheese or sour cream added on, it’s a nice vegan option.

Since it is fall, we asked Hambleton if he brought a different menu to the mix.

“Not really, it’s pretty much the same menu year-round. We have our five chilis served five different ways.”

As Hambleton pointed out, there’s five types of chili and five different ways they can be served, making that 25 choices. Remember, that’s just for the main dishes alone.

TexasEvery food truck owner has a go-to menu item that they have customers try out. However, Hambleton’s suggestion for this go-to item depends on the person.

“It depends on where they’re from. If they are from Texas, then they know chili… I would recommend they get our Houston chili. It’s our white chili. It’s pork and turkey with green chiles and white beans. I would recommend that over the cornbread, or our white trash brown rice.”

According to Hambleton, the white trash brown rice is white rice made with French onion soup.

“It’s a little less healthy and a lot more flavorful.”

Hambleton recommends the Houston chili for Texas crowds because it’s something different. However, if someone is not from Texas, Hambleton recommends the San Antonio Frito pie because “it’s a great introduction to Texas chili.”

“I just love explaining Frito pie to people, selling it to them and just watching their faces light up in delight as they chow it down.”

The food truck industry might not be the easiest industry to break into, but mobile kitchen owners can find a massive amount of success if they are willing to learn on the job and are passionate about said job. Hambleton broke down his favorite part about this fine industry.Texas

“You know, every day it’s different. Even though we’ve been to the same office 10 times, there’s still people who just started working or they haven’t gotten the chance to try us yet. Just interacting with our customers is really exciting and great.”

Hambleton also said he really enjoys all of the events, and doing something different every day in terms of the location.

If you are new to the idea that is owning a food truck or are thinking about breaking into the industry, then take the advice Hambleton had to offer to heart.

“Plan to work more than you’ve ever worked in your life.”
